WAIKIKI, Hawaii (KHON2) — A new eatery is opening in the Waikiki Shopping Plaza, bringing a fresh take on island-inspired dishes.
Wake Up 2Day’s Chris Latronic visited Hawaiian Style Seafood Company to meet with local boy and famous chef, Jon Matsubara.
Chef Matsubara shared all about his new restaurant set to open this summer, which will specialize in gourmet seafood with a focus on lobster rolls and other fresh, quick-service options.
The restaurant is an extension of Chef Matsubara’s successful eatery, FEAST, located in Manoa and is also known for its popular lobster rolls.
“It’s been a dream in the making. We’ve always wanted to bring accessible, high-end quality foods that showcase our local farmers, fishermen and ranchers,” Chef Matsubara explained.
Guests can pick up their dish at the Waikiki Shopping Plaza and enjoy it at the beach or hotel room. The eatery features a selection of champagne, sake and local beers as well.
Chef Matsubara showcased the Omakase Seafood Bento, a nine-course chef’s choice dish made with fresh ingredients.
“It can come in many different forms. It’s just something fun, so when you have it, you can come to Waikiki and not spend $1,000 on your nine-course seafood omakase, but you can come here, get it at market price and take it away.”

And if the tasting omakase bento does not fit your vibe, try out their world-famous lobster roll, made with a toasted butter roll, secret sauce, lobster and a butter bath.
Chef Matsubara said the lobster rolls came to light during the pandemic, after his wife told him to make it. The dish then went viral.
